A super organised father who wakes up at the crack of dawn every morning to pack elaborate lunchboxes for his two daughters has shared his delicious recipe for rocky road cheesecake cones, and they are sure to be a hit with every family.

George Georgievski, from Melbourne, has steadily built a following of more than 130,000 on social media over the past few years, mainly from sharing daily photos of the intricate lunches he puts together for his two girls.

In his latest recipe, George and his daughter Kiki showed how you can use the $6 Baked Cheesecake Tart from White Wings at Woolworths to make 12 rocky road-inspired cones  – and the whole thing takes just over half an hour.

‘I’m using our White Wings Crafted By You Baked Cheesecake Tart with a twist,’ George posted on Instagram. 

‘I’m going to turn it into a rocky road in ice cream cones and baked in the air fryer.’

George added: ‘Our recipe makes 12 ice cream cone servings and they were a hit.

‘The air fryer cooking time is just 25 minutes and with just 10 minute prep time you can’t go wrong. 

‘I found that the packet instructions were a good way to get our little peeps involved in the kitchen, and we had an awesome time making these. A big activity tick.’

How to make the rocky road cheesecake cones

INGREDIENTS 

Makes 12 cones; takes 35 minutes 

George shared the mouth-watering recipe on his Instagram page (pictured)

One packet White Wings Baked Cheesecake Tart Mix

3/4 cup of milk

1/2 cup of cream 

Two eggs

70 grams of butter 

Marshmallows

Turkish Delight

12 ice cream cones 

METHOD 

1. Melt unsalted butter in the microwave for 20 seconds and add it to the Cheesecake base mix.

2. Evenly distribute the base mix into 12 flat bottom ice cream cones and gently push down with the spoon.

3. Pop them in the fridge for about 30 mins.

4. Use a bowl and a whisk or a mixer and add milk and cream and blitz for 30 seconds. Slowly add the Cheesecake filling mix and then the two eggs. Mix till it’s all blended.

5. Add a few pieces of chopped marshmallows and Turkish delight to your ice cream cones. With a spoon, fill them with the mixture all the way to the top.

6. Pop them in the air fryer on 140 for 25 minutes, make sure you add a small ramekin filled with water in the air fryer too. Once cooked, leave them in the air fryer for another 25 minutes, then pop them in the fridge for at least an hour or overnight.

7. Sprinkle with icing sugar and watch the little ones devour them in no time.

To make the rocky road cheesecake cones, you’ll need to get your hands on unsalted butter, 12 ice cream cones, cream, the baked cheesecake tart, milk, eggs, marshmallows and some Turkish delight.

You can also top the dish with icing sugar to give it a final sweet flourish. 

The dish takes 10 minutes to prep, and then 25 minutes in the air fryer.

Thousands of people who saw the dessert were impressed and said they would definitely try it at home themselves.

‘Bright colours in the form of fresh produce [are key], use the rainbow as a form of inspiration,’ George told Daily Mail Australia.

The father of two also recommends making your sandwiches less boring by putting twists on them.

George regularly makes a ‘ravwich’, which is his take on the Italian ravioli, or the ‘spring-wich’, which is his take on a Chinese spring roll – for his two girls, and he said both make a fun alternative to a regular sandwich.

‘A bento box is also a cool and easier way to pack school lunches,’ he said.

‘There is no cross contamination – which is often an issue for kids – and it’s also leak proof, which means the food looks good.’

While you might think that preparing a lunchbox (pictured) that is as good looking as George’s takes hours, the 45-year-old said that in fact, it only takes him between five and ten minutes

‘I’m usually prepared, which helps,’ he said.

‘I spend one afternoon peeling, cutting and washing all the fruit and veggies. Then I can just keep them in airtight containers in the fridge ready to go.’

Typically his lunches are stuffed full of ‘bite-sized vegetables’.

Mini cucumbers, mini tomatoes and mini carrots are big hits in his household, while using a red capsicum as a cup for other food has also proven popular.

‘Anything bite-sized is less daunting for children,’ he said.

‘They’re more likely to pick it up and try it. Smaller pieces of fruit are fun to use for their bright colours also. Strawberries and grapes are my favourites.’
