Grogu-inspired avocado toast is the brunch every 'Mandalorian' fan needs to try

Grogu has been the inspiration for a handful of unique recipes beloved by fans of “The Mandalorian” and this avocado hummus toast is the latest nod to the small green creature.

Jenn Fujikawa, a former theme park designer-turned-lifestyle and pop culture writer, shared her savory snack just in time for National Avocado Day.

“Traveling the galaxy, you’re sure to encounter a variety of interesting foods along the way; everything from tentacled soup to cerulean-hued cookies,” she said. “While these things provide enjoyable sustenance for your long journey, sometimes it’s a healthy piece of avocado toast that will get you through. This tasty treat features fresh flavors that are combined to form the visage of young Grogu himself.”

Grogu Avocado Toast

Makes 1 serving

Ingredients

1/2 large avocado

2 teaspoons lime juice

1/4 teaspoon garlic powder

1 slice whole wheat country bread, lightly toasted

3 tablespoons hummus

2 pink grapefruit segments

1 kalamata olive, halved

Directions

In a small bowl, mash the avocado with the lime juice and garlic powder until just combined.

Spoon the avocado mixture onto the top half of the toast, forming the shape of Grogu’s head, reserving 2 teaspoons.

Spread the hummus on to the bottom half to form his cloak.

Add the remaining avocado to create hands and a nose.

Place the grapefruit segments down for the ears and the olives for the eyes. Use the back of a knife to create face details. Serve immediately.
